I found this delicious Tangerine & Roasted Beet Salad with Feta & Pistachios on EatingWell, and had to share! 

The main reason we all get bored with salads is that tons of leafy greens, as a base, is beyond dull day after day. I swear, if I see one more mixed green with low-fat vinaigrette...

This is full of fiber and is gluten-free. Truth is, this is as delicious as a dessert to me! I used spinach leaves instead of chard, because that's what I had in the fridge. It's worth the time it takes to roast the beets and the sherry vinegar just takes it over the top.  

Try this salad on for size. I wasn't a beet fan but love them when paired with the sweet fruit and the crunch of the pistachios. Follow the link for the fantastic recipe.
