So, this is what I do…cook for friends.

I’m calling Elaine a friend, but we are family. She’s married to my husband’s cousin, whom I adore. Fine choice for a partner and a fine choice for a friend. She’s the most pragmatic, level-headed person I know, which is why it is so shocking when she is genuinely silly. Elaine gets silly a lot, and I love that she does.

Elaine, who is always there for everyone in her quiet, dignified way, had surgery recently. She’s doing well, and while her husband worked last Saturday, I visited to keep her company. I brought food as I didn’t want her to lift a finger.

I’ve often said that I cook for many diets, and that is true. Elaine is strictly following the Keto plan and carefully counts her carbs. I had a lot of questions but was eager to give it a shot.

The menu was easy, quick to prepare, has several of her favorites, which gave her some tasty leftovers. The whole meal fit into a cooler and was topped with ice, which kept it fresh until I was done with the morning convention I attended.

It was very exciting to attend the Plant Based World Expo at the Javits Center! <—— More gushing over that on another blog.

Elaine loves her veggies, and I have created a Roasted Red Pepper Dip to accompany Persian Cucumbers and Celery (her favorites). I’ve been making a version of this dip for a million years, and love the rich, creamy texture.

Lainie Slaw is a Red Cabbage Slaw with Pecans, Toasted Sesame Seeds and Scallions. It‘s dressed with Rice Wine Vinegar and very little oil. It‘s a favorite in my home, but as Elaine always requests it, it’s been named in her honor.

I made a Broccoli Salad with sweet Balsamic Vinegar, juicy Tomatoes (not too many, as per her carb guidelines), Scallions and Black Olives. The broccoli stems are my favorite, which works out since everyone else likes the broccoli tops.

A favorite of hers is my Mushrooms Marsala. All you need is a pan of your favorite mushrooms, whatever you use if butter is forbidden, French Thyme, and Marsala wine.

A quick sauté and the fragrance will keep you smiling all night. Sea Salt and cracked Black Pepper before serving is all they need.

Elaine requested lean protein, and meeting that request is my Pork Tenderloin Caribbean Style. I grill it on my stovetop before finishing the cooking in my oven.

There should be leftovers, and a light vinaigrette over the Pork slices will keep it moist and offer a new flavor, the second time around.

Elaine is strict, and her Keto diet plan has helped her lose over 50 pounds! She is very modest and demurs about how much weight she lost, but her husband called out the number. She remains the beautiful woman she always was, but now she is so much healthier. Elaine’s much younger than I am, but I’ve always looked up to her. She’s a great inspiration for following through on what works best for your body.

Stocking her fridge for a few days was the least I could do. Knowing her strength and single mindedness, she will be 100% soo, and back to the business of life in no time.
