So much of our time is spent getting ready for things, that we miss half of the fun of company coming by. Entertaining should not be stressful, and even if it's just a evening with family, you should be able to focus on your loved ones and keep out of the kitchen. 

This recipe frees you up to have a good time and provides a tasty meal that everyone will love. When I have a busy day ahead of me, this is one of my stand-by savior recipes (and I love the leftovers for lunch).

This is meant for your slow cooker, but you could also bake this off in your oven. If you choose to your oven, you will see an adjusted cooking time below, in the recipe. 

The amount of chicken you want to cook is entirely up to you. I have made the same recipe to serve four or eight with no adjustment of ingredients (aside from the extra chicken). Here we go...

Ingredients

  • Four Chicken Breasts, sliced in half lengthways and lightly browned
  • Salt and Pepper to taste

  • Two large Sautéed Onions

  • Three sliced Roasted Peppers (any color but green is not as sweet)

  • One 11 ounce jar of pitted Kalamata Olives

  • Three tablespoons Capers

  • Two Lemons, juiced

  • Dried Thyme (Oregano will work in a pinch)

  • Three tablespoons Balsamic Vinegar

  • 1/2 cup of Chicken Broth

Instructions

Sauté your onions and place them in the bottom of your slow cooker. Season the chicken breasts with salt and pepper, sauté them gently to get a little color on them, and place them over the onions. Then add each ingredient (peppers, olives, capers, lemon juice, thyme, balsamic vinegar and broth), place the cover on the pot and cook on LOW for four hours and thirty minutes. 

If you decide to use your oven, arrange the ingredients in a baking dish (a small lasagna pan could work), and cover with foil. Bake at 350 degrees for an hour, then remove the foil, ladle the juices over the chicken and cook for 15 more minutes. 

Always test your chicken for doneness. It should be tender enough to shred after cooking.

Serving Suggestions

This is good at any temperature once it has been cooked, which makes it great for buffets. Some crusty bread will work as there will be this incredible sauce, but you can also serve it with some rice or over pasta. Now go enjoy your own party. Dinner is done.
