Soup Bowling - Cook Once and Eat Again, and Again
Getting back on track after indulging briefly this week. Believe me, I'm only human and when faced with coffee ice cream with espresso chips, I admit it conquered me. I had to give in for a scoop!
It was worth it, but I can only rarely indulge and keep losing weight. I’m back to clean, fresh foods, starting now.
It's nasty weather, so I have a huge pot of chicken stock going with ginger, onion and garlic. I also have a load of veggies I'm shredding and chopping. I’ll be making combinations for soup bowls that I can eat all week.
Each combo has some veggie mixes and a protein which goes separate containers for the fridge. These are my combos for the next few days:
Zucchini, Mushrooms and Snow Peas with Chicken
Spinach, Yellow Pepper with Shredded Pork
Broccolini with Shrimp and Bean Sprouts
All I need to do is add the hot broth and a bit of flavoring, like extra pepper, sesame oil or even hot sauce. Then I top each bowl with fresh herbs like shredded basil or parsley. It keeps it all tasting fresh, and while very filling, it's light on the calories and low on the fat.
If you are okay with starchy carbs, and want to add pasta or rice, have at it. I break down and give in to soba noodles or rice noodles every once in a while, but enjoy it just as much without. These are packed with flavor so I feel like I’m missing exactly nothing.
